Kairos Prison Ministry

Peanut Butter Cookies

(Makes about 10 dozen cookies)

1 cup margarine 1 cup peanut butter (smooth or crunchy)
1 cup packed light brown sugar 1 cup granulated sugar
2 eggs 3 cups flour
1 teaspoon baking powder 1 1/2 teaspoon baking soda
1/2 teaspoon salt
1. Cream margarine, peanut butter, both sugars, and eggs in a bowl.
2. Blend remaining ingredients in a separate bowl.
3. Add the flour mixture to the margarine mixture.
4. Roll the dough into 120 balls.
5. Place about 2 inches apart on a cookie sheet.
6. Flatten the dough balls into a 1 1/2 inch circle and make a criss-cross design with a fork.
7. Bake at 350 degrees for 10 minutes.
8. Remove from the cookie sheet, cool completely, and package.
