And He was known to them in the breaking of bread . . .

Communion Bread

"Proclaiming the Boundless Riches of Christ"

One way that we celebrate and "Proclaim the Boundless Riches of Christ" is by gathering around the communion table.  This symbolic meal helps us remember all of the many riches given to us through the death and resurrection of Jesus Christ.  Many people from your congregations may be unable to be a part of this gathering due to illness or other circumstances in their lives.  The following recipe for "Friendship Bread" is a wonderful way to share with them this part of the service.  Be sure to start this at least two weeks prior to the first time you want to use and share this bread.

Friendship Bread Starter

2/3 cup sugar 2/3 cup flour
2/3 cup milk 2/3 cup friendship

1. Combine all ingredients in a large, airtight lidded container and store at room temperature.
2. Do not refrigerate.
3. Stir every day for 10 days (using the following instructions).  The recipe makes more than the one cup needed, but allows for evaporation.
4. On day 1, do nothing.
5. On days 2, 3, and 4, stir the mixture.
6. On day 5, stir and add 1 cup flour, 1 cup sugar, and 1 cup milk, stirring again after the additions.
7. On days 6, 7, 8, and 9, stir the mixture.
8. On day 10, add 1 cup flour, 1 cup sugar, and 1 cup milk, stirring again after the additions.
Give 1 cup to each of two friends and use the remaining cup in the bread recipe as starter.

Friendship Bread

1 cup of starter  1 1/2 teaspoons baking powder
2/3 cup oil 1 - 1 1/2 teaspoons cinnamon
2 cups flour  1/2 teaspoon vanilla
1 cup sugar 1/2 teaspoon salt
3 eggs 1/2 teaspoon baking soda

1.

Combine all ingredients.  Pour batter into 2 greased and sugared loaf pans.
2. Bake at 350 degrees for 45 to 50 minutes (check at 40 minutes by pressing the top.  The bread is done when the top springs back after it has been pressed.)  Cool for 10 minutes and remove from the pans.
Note:  The dough also can be used to make mini-loaves.  They should be baked at 350 degrees for 30 to 35 minutes.  The recipe yields 2 loaves or about 15 mini-loaves.
